Eating summer up.

Post image for Eating summer up.

As we all know. I love summer. And I love my boys being home with me. The other day while at the grocery store, the check out girl said ‘bet you can’t wait for school to start’ and I said ‘nope. I love summer. I like my kids’….naturally she rolled her eyes about as subtly as Snookie gets a tan. We marched out. All three of us with smiles on our faces. On the way home Jack said ‘She thought you were kidding. But you really do like us huh?’

And today is a  perfect example of why summer with my boys is so cool. Of course life goes on when the kids are home and that means mommy had an important mid morning conference call with Disneyland that could not be avoided. When the boys asked if I would turn on the stove so they could make pancakes I said no. But I gave it some thought…and decided. SURE. It can’t be anymore dangerous than roasting marshmallows at camp right? So I chatted on my call, while my little chefs created behind me. And create they did. They made Banana Pancakes, MnM pancakes and my all time favorite invention EVER a pancake-filled-with-syrup pot sticker.

It was inspired. And delicious.

See how yummy summer is?

One more reason I need to be your neighbor!

We made pancakes, too…my daughter loves them with chocolate chips in them and I love the idea of the syrup filled pot stickers…I have a handy little pampered chef gadget that crimps the edges together all nice like that…never thought to use it on pancakes! Your boys are so creative!

BTW…have you ever tried making brown sugar & pecan pancakes? They’re to die for and are so good with a little butter that you can totally skip the syrup! Yumm-o! Now I’m getting hungry…

Just how does one do the syrup filled pot sticker? cook the pancake and crimp it with what… Looks fabulous and something the kids would love.

Your blog is the best… the place I come for a quick laugh in this job I detest…. Thank you!!!

I’m with you — I love having my kids home with me too. The school year offers a sort of freedom but I’ll take being home with my kids *any* day!!!! You’re a brave mama to let them create like that. . .makes me think maybe I need to say ‘yes’ more often. . .

First off – you are brave to let your boys take over the kitchen. I’m not sure I will ever be able to trust mine in there LOL (granted, they are only 3 and 4 right now). AND judging from your boys’ results? I need to visit! The did a great job!

I love it! My 9 year old has been cooking eggs in the morning for over a year. She loves to cook and it is a great creative outlet. Yay mom for saying yes! (PS – she makes her 12 yr. old brother “Reece’s” pancakes too. Chocolate chip & peanut butter chip!)

Quick — put their names on that potsticker! This will spread like wildfire and you want everybody to know that YOUR SON created FlapJack Potstickers . . . or PotTuckers?
